Lon Symensma's inspired Asian fare made ChoLon one of the city’s very best restaurants from the get-go — but what would he do for an encore? Denver found out this spring, when Symensma opened Cho77. This isn't a diminutive ChoLon, nor is it a pho joint. Instead, Symensma is using this sliver of a space on South Broadway to showcase street foods from Southeast Asia, a part of the world where he’s lived and worked and which he clearly loves. Gretchen Kurtz loved much of the food she found at Cho77, which she reviews this week; we sent photographer Danielle Lirette to capture a behind-the-scenes look.  All photos by Danielle Lirette.
