First Look: Arcana Opens Monday in Boulder

When Arcana opens in Boulder on Monday, February 15, it will feature a menu from chef Matthew Lackey that will highlight early American cuisine, ingredients and techniques. "When people look back — at the past 10 to 20 years — they'll says that this is when America really found its voice culinarily," explains Elliott Toan, who owns the restaurant with his wife, Annie. Expect local meats and produce, traditional cooking and preservation techniques, and a stunning interior overseen by Annie Toan.
