Dan and Michelle Landes, owners of WaterCourse Foods and City, O' City, Denver's award-winning vegetarian restaurants, have a new venture in the works -- and this one will actually be on the water.

Along with partner Dave Paco, they're opening an international hostel in Puerto Escondido, Mexico, named Osa Mariposa (which translates to "Bear Butterfly"), where rooms will go for as little as $15 a night (shared) -- and the pastries at breakfast should be unsurpassed, judging from the baked goods the couple offer in Denver right now.

The Landes family is off on a two-week trip to Mexico to "develop the menu and to play in the waves," Dan reports. We'll have more details when they return; in the meantime, here's an interview he gave to VegNews.
