Number 3: Pork knuckle sandwich from the Highland Tavern

Is it possible for a neighborhood watering hole, whose primary focal point is a Ping-Pong table, to achieve culinary enlightenment? Highland Tavern, perched at the corner of Navajo and 34th Avenue, in Lower Highland, comes damn close. Executive chef Jeremy McMinn and sous David Bumgardner, both alums from Marczyk Fine Foods, have created a seriously awesome menu that gloriously exploits, among other things (like the addicting housemade tater tots), pig. There are pork chops, of course; pork ribs every Sunday; pierogies studded with bacon; a "porkstravaganza" platter heaped with braised bacon, cured pork, pork shoulder and sausage; and the crowning glory, a pork knuckle sandwich. The indulgent result is a splendid hand-crafted terrine of ground pigs' feet and swine shank that's been bronzed in the deep fryer, smeared with a jolting Tabasco rémoulade, topped with lettuce and tomatoes and mounted between two buttered and grilled bun halves. Way to pimp pork, boys.
