No. 97 Soft egg ravioli from Prima
I found myself tucked into a velveteen booth last night at Prima, a last-minute dinner decision before the curtain call of Wicked at the Temple Buell. I’ve never been a huge admirer of Prima, Kevin Taylor’s Italian restaurant in the Hotel Teatro, but the housemade ravioli, pooled in butter, and pillowing a soft egg that runs rivers of yolk at the poke of a fork, is so beautifully prepared, so exceptionally perfect, that you’ll thank the culinary celestials you’re in Denver.
