Walk-in Burgers opens in Edgewater

"I've been in the food racket for a long time, and I enjoy food and seeking our trends," says Chip Eakins, who opened

at 2255 Sheridan Boulevard, in the former space belonging to Sister's Pizza and Mussels, on February 18.

"I started traveling quite a bit and realized that burgers were really up and coming, and after eight or nine months looking for a location, I found this space and from what I've seen so far, it's a great addition to this area," explains Eakins, who previously owned pizzerias and delis in Boulder Country.

The menu is a simple board of all-natural grass-fed burgers; hand-cut fries with housemade dipping sauces; a Chicago-style dog; a few chicken sandwiches, all of which are made with Red Bird Farms chicken; a handful of salads; a hand-crafted, panko-crusted quinoa and veggie burger, and locally made desserts. "We're using high-quality, healthy, sustainable and local ingredients," notes Eakins.

He's still waiting on his liquor license, but hopes to have that in place by the end of March.

Edgewater's newest burger barn is open 11 a.m. to 10 p.m. Wednesday through Saturday and 11 a.m. to 9 p.m. Sunday through Tuesday. For more info, call 303-238-2002.
