Finn's Manor is nearly ready to open in River North. The food-truck pod and craft-cocktail bar in the 2900 block of Larimer Street (across the street from Ratio BeerWorks) is the creation of food-industry veteran Noah Price, co-owner of the Populist and Crema Coffee House, Thomas Taylor and Robert Sickler, Denver's "Voice of Whisky." In the spirit of Portland "pods," they will provide five spaces for food trucks, with a frequently rotating selection of cuisine next to the covered bar.

The food trucks on hand for the inaugural run will include: Tiger Monkey Korean, bao bun expert Night Shift, Austin-style barbecue rig Owlbear, Denver favorite Taste of the Philippines, and one more yet-to-be-named vendor.

This prime RiNo location was once an auto-parts salvage lot called Bennet's, which opened in 1979. Finn's will feature indoor-outdoor space, with a partially covered area for the food trucks and carts and a converted red brick house that has been completely gutted and remodeled. Decorative gardens, a slatted fence freshly painted in pink and yellow, and brand-new concrete walkways and patios give the former industrial setting a welcoming vibe.

The trio acquired the space nearly two years ago, and construction has taken more than a year. Price says that Sickler's whisky and rum expertise will be a big part of the cocktail program and that Taylor "is a huge beer nerd and avid home brewer" who will create a beer list that focuses on East Coast, Belgian and other European selections, since the neighborhood is already awash in local brews. Price notes that Finn's will also serve a variety of non-alcoholic juices and teas to complement the international cuisine.

Barring any delays in final inspections, Price expects to host some friends-and-family nights next weekend and then will open the space, which radiates coolness in an already hip neighborhood, to the public on Tuesday, September 1.
