French food is all about rich flavors, explains City, O’ City’s new executive chef, Kurt Eichenberger. Since in traditional French cooking those flavors involve a lot of butter and meat, Eichenberger had to get creative to whip up intense tastes for the vegetarian restaurant’s special Paris-inspired New Year’s Eve. “To get strong, bold flavors out of a vegetable to produce something really hearty and substantial, I made a vegetable demi-glace over two days for the Tofu Diane,” explains Eichenberger of his new take on a classic that usually involves a steak rather than bean curd. The menu (there will be a prix fixe option as well as à la carte items) will feature other vegetarian and gluten-free updates on French cuisine, including a champagne-vinaigrette Brussels sprouts salad, polenta crepes with fig compote and Taleggio cheese, and truffled risotto.

To help transform City, O’ City into the City of Light, French films will play on the wall and festive music will fill the air. Eichenberger notes that he and his line cooks will all don tuxedo T-shirts to ring in the new year, and the restaurant will offer diners a discount code for tickets to the Denver Art Museum’s Passport to Paris exhibit.
