Water Grill, which opened a 200-seat eatery in Union Station neighborhood in February of 2022, definitely serves special-occasion fare, and it's priced to match. But its commitment to sourcing (it’s owned by family-run distributor King’s Seafood Company) means you won’t be left high and dry by low-quality seafood. Many ingredients, such as spiny lobster and spot prawns, are only available seasonally, though you can order massive iced shellfish platters, sushi, certain species of whole fish and dry-aged ribeye year round. A special point of pride for Water Grill? Its live bar, which stocks over fifteen different kinds of oysters every day, along with other specialties like red sea urchin (also known as uni).
