Between the '60s and the '80s, Denver had a fairly vital tiki scene, thanks to Trader Vic's and Don the Beachcomber. But save for a few short-lived tries over the past few decades, this city's tiki action was largely extinguished years ago. When the 2,200-square-foot Adrift finally opened in 2012 after several delays, it established itself as Denver's only tiki bar. Co-owner Jay Dedrick, who owns Denver's Swing Thai restaurants, wanted the spot to be old-school and timeless, and Adrift is definitely a step back in time. The spot, which pays homage to the thatch-roofed hooch huts of yore, specializes in modern and classic tiki cocktails as well as Prohibition-era tropical drinks.
