The first incarnation of Chubby's inhabited a squat little shack on West 38th Avenue for over fifty years. It had no booze, no tables, no servers, no menu other than what was taped to the wall beside the register. But despite what was lacking -- or maybe because of it -- Chubby's, the original Chubby's, was an institution in Denver, particularly beloved by those who overindulged on a Friday night. The new building, located at the same address, is brightly hued and much more modern: The sodas are self-serve, the large menu board looms over the dining room. What hasn't changed is the food: It's still heavy, salty, occasionally greasy and comes with a green chile unlike any other green chile in the state -- a gelatinous orangey-brown goop hot enough to strip paint and powerful enough to burn off the worst effects of even the most over-enthusiastic immoderation.
