Like Denver itself, the Wynkoop Brewing Company has gone through a lot of changes over the past three decades, but the city’s first modern brewpub continues to be an anchor in LoDo. It opened in 1988 in an old warehouse in a rundown part of town as an English-style pub serving cask ales and traditional dishes; now-Senator John Hickenlooper was one of its founders. Today the Wynkoop brews a few more modern styles and has added a chicken restaurant, the Coop, in back. But the ghosts of good times and great cheer continue to make this a must-stop on anyone’s list of Denver watering holes.
