The annual pork parade known as Cochon555 trotted into town on Sunday, March 19, lining up five Colorado chefs in a battle of whole-hog cookery. This year's competitors were Hosea Rosenberg of
Blackbelly, Darrel Truett of
Barolo Grill, Bill Miner of
Il Porcellino Salumi, Will Nolan of the Viceroy in Snowmass and Burton Koelliker of Bonanno Concepts. Nolan took home top honors, wowing judges with the tastiest pig parts, but lines were long at every station for another successful season of swine.
