I love it when an unfamiliar cuisine forces me out of my comfort zone, sending me into a post-dinner frenzy of research as I try to understand a culture through what it eats.

When I first sat down at African Grill and Bar, an Aurora restaurant that specializes in west African fare, I studied the list of strange syllables and grainy photos, eager to order a random sampling and then return when I’d boned up.

That proved unnecessary, though, because the owners of the restaurant were happy to provide me with as much education as I could stand, eagerly serving moimoi, fufu, jollof rice and peanut butter soup while talking about the nuances and common ties of the food served in Ghana, Nigeria, Liberia, Senegal and Gambia.
