Number 45: Aloo gosht salin from the British Bulldog
The arguments that erupt at the bar of the British Bulldog, often frequented by bleary-eyed, beer-swilling Englishmen, are nearly always about soccer, er, futball, which is exactly as it should be at a pub whose Telly is usually, if not always, tuned to field battles over a ball. But the one thing that even the most belligerent rivals can agree on, is that the cooking at the Bulldog, especially the powerfully flavored Pakistani food, is absolutely delicious. Indian food is often refined and regal: Pakistani cuisine, on the other hand, is fearless and ferocious. So while India has its lamb vindaloo, far too often mellowed out for an American palate, Pakistan peddles aloo gosht salin, a deeply spiced, unsympathetically (and wickedly) hot curry, fragrant with chiles, cumin, cilantro and garlic and stewed with tomatoes, potatoes and lamb. It’s a mind-blowing, killer curry that should be sold by the bucket.
