East Colfax is home to several Ethiopian restaurants, and another joint just opened near the corner of Colfax and Quebec: Peacock Restaurant and Bar, which, says owner Eden Habte, is unaffiliated with the other Ethiopian spots in the area.

There, in a dark dining room painted gold and infused with the scent of simmering berbere-heavy stews, Habte is serving Ethiopian specialties, including lentils, beef tibs and a variety of wots, an Ethiopian stew.

Although the restaurant officially opened back in June, a grand-opening buffet celebration was held over the weekend. Habte says she’s still adjusting her recipes (as well as her prices). For more info, call 303-377-1880.
