Kristen Cofrades is the new executive chef at Warwick Denver Hotel, overseeing Randolph’s Restaurant & Bar (which has one of the best patios in town), as well as the room service and banquet departments of the hotel at 1776 Grant Street.
Cofrades comes to the Warwick (and a post formerly held by David Snapp) from Chicago, where she was executive task force chef for Omni Hotels. But prior to that, she worked her way up from pastry cook to executive chef at the Omni Interlocken Resort in Broomfield.
“When it comes to food,” she says, “my theory is to keep it simple. I enjoy using fresh, local ingredients and combining each of their unique qualities to create one fabulous dish.”
