Number 23: Pate and duck rillettes from Fuel Cafe
If you keep up with the menu at Fuel Cafe, then you already know that the supper board changes monthly. And if you know that, then you’re also aware that Fuel only turns out dinner Thursday through Saturday. Those caveats mean just one thing: You have exactly nine nights to snap up a reservation, which, if granted, will afford you the opportunity to eat chef Bob Blair’s exquisite plate of pate and duck rillettes. The pate, a generous slab of pork parts, sweetbreads and chicken livers studded with pistachios, passes your lips with the same jaw-dropping rapture that washes over you when you’ve been hit on by a supermodel. And the duck rillettes? You want the whole jar to yourself. Really you do. Offer to share the stoneground mustard and maybe the pickles, but if you’re asked to share the rillettes, abduct the jar and dash.
