After a few months of renovation and heavy cleaning, Prohibition opened this week in the former Roslyn Grill space at 504 East Colfax Avenue. For now, the bar will start pouring at 5 p.m., but owner Jimmy Callahan says he’s hoping to open for brunch soon at 11 a.m.
