Armed with a portable oven and mobile sous vide license, Kelly Whitaker has been putting the finishing touches on Mobile Basta, the traveling extension of Pizzeria Basta that’s capable of reproducing the entire menu of the Boulder restaurant on the street.

He’ll debut the fruits of his labor today: Mobile Basta will set up tonight on the patio of Infinite Monkey Theorem in Denver for First Friday.

Tonight, the menu will be simple. “We’re doing two different $8 pizzas: cheese or no cheese, just like in Italy,” Whitaker says. He also notes that as the summer progresses, he’ll be cooking up other things besides pizza.

The monthly art walk is to be Mobile Basta’s only regular stop. “My restaurant’s doing really well,” the chef explains. “I don’t have time to set up in a parking lot all day.”

Rather, he’ll be using the oven to throw some special one-off events. “I want to do some creative pop-up stuff,” the chef explains. “I met Ludo Lefevbre, and he’s doing some crazy stuff. I want to use that oven to do some creative things outside of my restaurant.”

He cites, in particular, a future farm dinner with Culinary Connectors and events at Aspen Food & Wine, the annual orgy of eating and drinking where he’ll be unleashing several different dishes over the course of the weekend.

In the meantime, Mobile Basta will be making an appearance every First Friday for the whole summer, save for a couple of guest chef nights. Catch it tonight starting at 5 p.m.
