Waffle Up is finally more than just a food truck. Today owners Jasmine Spoonemore and Tom McCarty opened their bright little waffle cafe in the Baker neighborhood, in a corner storefront formerly occupied by Humble Pie.

Waffle Up specializes in Liege-style waffles, which Spoonemore says are yeast-risen — which means the waffles start as a dough, not a batter — and contain pearl sugar. The tiny sugar beads caramelize against the hot waffle iron, adding extra flavor and crunch to the outer surface.
Waffle Up serves a variety of sweet and savory waffles and also offers risotto oatmeal, yogurt parfaits and a full espresso bar with coffee from Corvus. The cafe is open from 7 a.m. to 4 p.m. Tuesday through Sunday. But if you’re looking for for a Liege waffle on the streets this week, you’ll have to visit the store; the truck won’t be back in action until next Monday.
