A former vegetarian, Daniel Asher, the now-carnivorous chef of Root Down, is a strong proponent of eco-friendly, sustainable and local food sourcing, and throughout the month of August, as part of the Denver Public Library’s Fresh City Life series, he’ll be conducting weekly food demonstrations that focus on produce, humanely raised meats and products plucked from Colorado for Root Down — A Journey Into Local Cuisine.
“Many people have become so detached from what they eat. This series is all about reconnecting with local food, getting down and having fun with some wonderful seasonal cuisine,” explains Archer. “It’s about consciously sourcing ingredients, seeking out some great local farms, and showcasing the best of Colorado’s exceptional growers.” Asher will prepare one dish per week, culminating in a four-course meal, including dessert. First up: tomato and cantaloupe gazpacho with pea shoots, fig-infused balsamic and chipotle crème.
Today’s class, which includes recipes and samples, begins at 10:30 a.m. Subsequent classes will take place on August 14, 21 and 28, at the same time.
