The Workbench
For being the first major city with recreational pot, Denver is severely lacking in cannabis hospitality spaces – much of that by its own doing. But the brains and culinary talents behind the Workbench have figured out how to pair cannabis and cooking in the most tasteful and effective way yet. Named for the “workbench” of chefs in an open kitchen, where diners get a front-row view, this dinner experience set in a downtown loft has, at minimum, ten ever-changing courses of dishes like A5 wagyu, foie gras French toast and homemade ten-layer fruit push pops. Mocktails are made to pair with certain courses, as are a handful of carefully selected rosin samples for dabbing. Talk about fine (and high) dining.
