Number 56: Corned beef hash from Argyll Gastropub
If your corned beef hash obsessions are fixated on the mushy slop in the tin, or you’re a purist who insists on crisp-edged, matchstick-size tubers and cubes of corned beef, then Argyll Gastropub is not for you. Here, the house-crafted hash is a serious imperial salute to a more stately interpretation, a plate-spanning spread of excellent house-cured corned beef, shredded, salty and enriched with white beans, root vegetables, sheets of Gruyere and two of the most perfectly poached eggs you could possibly imagine. It won’t be to everyone’s liking, but if you’re weary of walking the familiar plank, chef Segio Romero’s inspiring version is exuberant and delicious, which is why it merits a coveted place on our list of favorites.
