Number 82: Tacos al pastor from Los Carboncitos
There are few foods I love more than marinated pork on a spit. And truth be told, there are very few restaurants I love more than Los Carboncitos, which now has three locations throughout the metro area, including its newest space in Aurora, which has a liquor license. But as much as I’d prefer a cold cerveza with my tacos al pastor — easily one of the most ridiculously delicious foods in the universe — I’m perfectly happy without one, mostly because when that sweet and spicy shaved pork with its deep char and smoke hits my mouth, I just want another damn taco from whichever taco wizard happens to be feeding my addiction. An addiction that’s fueled by the nips of cilantro, onions and pineapple lobbed on top and Los Carboncitos’s terrific caddy of salsas — each one spicier and more intense than the last — that add the final sign of sacrificial resignation.
