Adelitas Cocina taking over former home of Bistro One and 3 Monkeys

The space at 1294 South Broadway that had been Bistro One, then 3 Monkeys Cantina, is about to be transformed again, this time into Adelitas Cocina y Cantina, which will specialize in traditional Mexican fare from the state of Michoacan.

While Bistro One started as a chef-driven spot(with Olav Peterson behind the burners), it soon dialed down ambitions to more of a neighborhood spot. And 3 Monkeys was more casual still.

Although Adelitas will also be a cantina, it plans to focus on a more family-friendly atmosphere — and still take advantage of the excellent patio installed out back under the building’s previous incarnations.
