Just got word that Argyll is opening today in the former home of the Squealing Pig, 2700 East Third Avenue. It’s brought to us by Robert Thompson, best known for Brasserie Rouge, our Best New Restaurant of 2004. Sadly, Brasserie Rouge didn’t last (its space in the Icehouse will soon become the Icehouse Tavern), but now we have Argyll, a “gastropub.”
According to Argyll’s website, “‘GastroPub’ is a British term for a ‘public house’ that specializes in high-quality food. The term derives from gastronomy
(the art and science of good eating) and was coined when the first
gastro pub, The Eagle, was opened in London, England. GastroPubs are
well known in Europe for offering a relaxed atmosphere with an eclectic
menu prepared to the highest possible standards. In recent years a
number of wonderful gastroPubs have opened in New York, Chicago and
other major markets here in the US. At
Argyll, our award winning design team has created a ‘public house’ with
the warmth and ambience of a 100 year old pub along with culinary
vision that we hope becomes part of your daily reveries.” You get the idea.
Argyll is Denver’s second gastropub. The first was Jonesy’s EatBar, which Leigh Jones (Thompson’s ex-wife and a partner in Brasserie Rouge) created to replace the Dish, her first restaurant in this space at 400 East 20th Avenue. And soon we’ll have a third: Colt & Gray, slated to open next month at 1553 Platte Street.
