Yet another fast-casual spot has popped up in the metro area, this time from a franchise originating in Texas. The location at 4086 South Parker Road in Aurora is the first outside of that state for the Salad Bowl, a place dishing out, well, bowls of salad.

Like a reverse salad bar (another Chipotle-like concept), the workers will compile your bowl as you work your way down the line.

Manager Aaron Hughes gave me a rundown.”The concept is fresh produce salads, and you can create your own or work off a list of our signature salads,” he says. “It’s a pretty basic idea. We offer fresh fruit, salad, vegetables, and then we have a variety of proteins like shrimp, salmon, turkey, ham or chicken to go on top.”

Hughes says the group has ambitious plans for expansion in the Denver area, including an outlet in the Sheraton Hotel Downtown and another in Southlands. But so far, it’s just doing guerilla marketing for this new outlet, which opened soft last month, handing out fliers and giving out samples.
