After twenty years, the Budapest Bistro at 1585 South Pearl Street has made some changes — in both decor and hours. 

Budapest Bistro is owned by Anna Hellvig, who’s also the chef, getting only occasional help in the kitchen from her daughter. The restaurant’s manager is Anna’s son, Mark, who says his mother wanted a bit of a breather — which is why Budapest Bistro is now just doing dinner, Tuesday through Sunday from 5 to 10 p.m.

According to Mark, Denver’s oldest Hungarian restaurant has also updated its look with new tables, chairs, floors, painting and lighting, as well as a new logo to replace the old one that was vaguely communist, at least in color scheme, as is evident on Budapest’s website.  
The restaurant has introduced a winter menu, too, which features such hearty items as paprikash and goulash. The recipes have been passed down for generations, so you’re guaranteed a traditional experience — even if the setting is South Pearl modern.
