Q: A long time ago, you wrote about a Mexican restaurant that didn’t “own a can opener.” Do you remember what it was?
A:That would be La Cueva (9742 East Colfax Avenue, Aurora, 303-367-1422), a mom-and-pop eatery that’s been serving up fresh salsas, fire-breathing green chile and the best refried beans in town for almost thirty years. And it’s true that they have no can opener: Everything is made from scratch. The recipes for many of those dishes are included in My Husband’s Recipes, Norma Nuñez’s cookbook that’s available in local bookstores for $24.95. But the food’s more fun at the restaurant, where Nabor Nuñez still does the cooking, and daughter Molly and son Alfonso run the place at night.
