St. Patrick’s Day is my favorite holiday, and this year I’m going to start things off right. So bright and early next Wednesday morning, you’ll find me tucked into a cozy booth at the Squealin’ Pig Irish Pub, holding tight to a glass mug and sipping an Irish Coffee ($5.25) — a heady mix of coffee, Irish whiskey and whipped cream with a crème de menthe dribble for a splash of color. While the Squealin’ Pig will party like it’s St. Paddy’s Day all weekend, the real celebration begins on March 17, when the bar will open two hours early, at 9 a.m., and offer live Irish music and dancing throughout the day and night. You won’t find any green food-coloring in the beer here; instead, patrons lined up along the wooden bar will be downing one of the many authentic Irish beers on tap at this garden-level, Cherry Creek North pub — from rich Guinness and Wexford’s Irish Cream Ale to Murphy’s Irish Red and Harp Lager. The Pig also has a large section of Irish scotches and whiskeys — which you can drink without coffee, of course. But whatever your drink of choice, be sure to raise your glass and repeat the classic Irish toast: “Thirst is a shameless disease, so here’s to a shameless cure.”
