If one of your New Year’s resolutions is to save your pennies, Encore, the New American restaurant at 2550 East Colfax Avenue, sympathizes with your plight. To that end, exec chef Paul Reilly has introduced some swell new food specials that run Sunday, Monday, Tuesday and Wednesday of each week. On Sunday, between 4 and 8 p.m., all entrees are buy one, get one free; Monday rewards your wallet with a burger, beer and fries (some of the best spuds in Denver) for $10; mussels, frites and a glass of wine go for $12 on Tuesday; and on Wednesday nights, a plate of prime rib and vegetables is $14.
