While there’s no end to the bottomless mimosas suddenly pouring out at brunches around town, Panzano has just introduced another sweet option: the Lychee Sparkler. Bartender Jodi Dolph created the concoction for an in-house contest that called for creating summertime drinks featuring Zonin Prosecco, the Italian sparkling wine.

Lino Vitale, Prestigious Accounts Manager for Casa Vinicola Zonin, was in town to tout Zonin Prosecco and oversee the contest. Dolph’s entree — which was accompanied by a raw lychees as a visual aid — took top honors over a half-dozen other contenders, and although it wasn’t designed as a mimosa replacement, we think it works equally well at brunch or in the evening. Here’s the recipe:
Lychee Sparkler
2 oounces Zonin Prosecco
1 ounce Soho Lychee liqueur
1/4 ounce ginger syrup
squeeze of lemon
lemon twist garnish
The Lychee Sparkler is now the featured drink at Panzano, where it costs $9. Sadly, it’s not available in a bottomless deal. But you can get a glass of the Zonin Prosecco for $5 during happy hour, which runs from 2:30 to 6 p.m. seven days a week. (The rest of the time, it’s $10.)
