There have been so many chef shuffles lately that one swam by almost without notice. Matt Mine, the affable exec chef who’d stayed on when Denver’s Oceanaire was swallowed up by Landry’s, is no longer with the downtown restaurant. John Robinson is now the executive chef/managing partner there.

Robinson graduated from the Culinary Institute of America and worked under award-winning chef Zane Holmquist at the Stein Eriksen Lodge in Park City, Utah. After moving to Minneapolis, he became the executive sous chef at the Westin Hotel, then joined the Landry’s team in early 2012 as sous chef at the Oceanaire in Minneapolis before relocating to Denver.
In addition to Landry’s Seafood House and Oceanaire, in Denver Landry’s also owns McCormick & Schmick’s Seafood Restaurant (both locations), Chart House, Bubba Gump Shrimp Co., Saltgrass Steak House, Willie G’s and Morton’s the Steakhouse, among others.
