What’s in a name? Wafflich, a restaurant that did not serve waffles but an Italian-style sandwich (a wafflich), has been replaced by The Pasty Republic — which does not serve pastries, but English-style pasties. The owners are British transplants, who decided to introduce their favorite treat to the Denver area. And from 5:30 to 9 p.m. on Friday, March 21, the Pasty Republic will host a grand opening party complete with music, beverages and a deal that gets you a free pasty when you buy two.
The shop is already open, though, and photographer Danielle Lirette just stopped in to get a taste of the pasties. Here’s what’s in store for you at the Pasty Republic.
