“I came to Denver in 2020 with a heavy heart, still mourning the loss of my New York restaurant and the dreams I had for my life there,” says Delores Tronco, the restaurateur who opened the Greenwich at 3258 Larimer Street in 2021.

Tronco was a familiar name in the local scene long before that, as one of the original co-owners of Work & Class when it debuted over a decade ago. In early 2017, she sold her part and moved to New York City, where she’d long dreamed of living and having a restaurant. She spent time working at various established spots there, eventually becoming the assistant to David Barber of Blue Hill at Stone Barns before opening a New York spot of her own. The Banty Rooster debuted in Greenwich Village in December 2019 — which, of course, turned out to be terrible timing.

Three months later, the COVID-19 pandemic hit and indoor dining was shut down. Tronco tried to keep the Banty Rooster afloat, but ultimately decided to close it for good and return to the Mile High. “I am not done with New York yet,” Tronco told Westword in 2021, just after the debut of the Greenwich, which she calls “a love letter to New York City and a home for the Denver community.”

Now, she’s giving NYC another try. “Five years later, I’m ready to return to the city that has always held my heart,” she says. But she’s not closing the Greenwich.

Instead, she’s passing the reins to Drew Davis, who will take over as the restaurant’s new owner on January 1. Davis is a longtime New Yorker and recent Denver transplant who has worked in both back- and front-of-house positions in restaurants for over a decade, with a resume that includes Momofuku, the Alinea Group and BL Gruppo.

“The Greenwich captured my attention immediately — not just the food, but the hospitality and the way Delores created a space that feels both elevated and welcoming,” Davis says.

When the Greenwich opened, it was helmed by chef Justin Freeman (who is now the executive chef at Somebody People) and had a more broadly new-American menu with a focus on pizza. After Freeman moved on, Luke Miller moved up to lead the kitchen team, and last year, the Greenwich switched its focus to Italian fare. Under Davis, more changes are coming — though the culinary team, including Miller, will remain the same.

Plans include “menu evolution, updated branding and new leadership appointments that will further define The Greenwich’s next chapter,” according to an announcement. “Change will be thoughtful and intentional,” Davis notes. “This restaurant has a loyal following for good reason, and I want to honor that while moving forward.”

Regarding Tronco, “I’m honored to carry forward what she’s built while bringing my own vision to the table,” he says. “This restaurant has so much potential, and I’m excited to explore that with the incredible team already in place.” We’ll certainly be watching to see how the Greenwich evolves under Davis in 2026.
