The long-delayed Squeaky Bean finally made its debut Monday — and no one was happier to see the open doors than the folks at Rosa Linda’s Mexican Cafe, right next door at at 2005 West 33rd Avenue.
“It has been a rough road for all involved, but it’s now open and it looks great,” says Oscar Aguirre, who works at the restaurant his parents started 25 years ago.
Rosa Linda’s has turned its middle room into a cozy bar, and has also started featuring specials. This week’s is calabacitas: zucchini sauteed with onions, tomatoes and corn, and served with rice and beans for $6.95.
And now you can take Rosa Linda’s on the road: It’s offering to-goparty packs that include mini tamales, mini taquitos and quesadillas, with chips and salsa — enough to feed eight to ten people — for just $30.
Of course, if you take the food to go, you won’t be able to enjoy your meal at one of Rosa Linda’s street-side tables, an ideal spot to get a taste of this fast-changing neighborhood. Today, the Bean. Tomorrow, who knows?
