Since its inception in 1987, the Colorado-based chain of Egg & I restaurants has expanded across six states, proffering a menu of breakfast and lunch items to customers who get their egg on in the casual digs.

Today, it opened its 41st restaurant at 7830 West Alameda in Lakewood.

The restaurant is the 24th in Colorado, and at 6 a.m. this morning, it started serving up frittatas, omelettes and whole-wheat pancakes coupled with fresh-squeezed orange juice to the receptive western suburbs.

“We can’t wait to be a member of this incredible community,” says Todd Richardson, general manager of the new spot. “We already feel very welcome.”

The eatery will be open 6 a.m. to 2 p.m. Monday through Friday, and 6 a.m. to 2:30 p.m. on weekends. For more information, dial 720-287-5353.
