WaterCourse Foods, Denver’s landmark vegetarian restaurant, is losing the “vegetarian” part of its menu and going all vegan as of today.

With the brand-new menu introduced today, Watercourse Foods will now be offering only plant-based food.
The menu isn’t the only recent change at WaterCourse: Executive chef Rachel Kesley was let go last month and replaced by Sean Jacob Kendrick. There is also a new chef de cuisine in the kitchen, Melanie Lynn Minard.

In a blog post announcing the new menu, owner Dan Landes said this: “From this day forward, 100% of the WaterCourse Foods menu will be sourced from plants. We celebrate the way we always have at WaterCourse, with a plate of comfort food and a cold pint of beer.”
So as part of the celebration, WaterCourse is featuring an all-day happy hour today with drink specials and $5 appetizers.
