This week's cover story, "Fantasy Island," explains that to pave the way for the riverwalk officials in Glendale hope to build along Cherry Creek, the city has made a series of civic improvements over the years.

In turn, city boosters say those improvements have led to more private development, including CitySet, which is home to two hotels and will eventually boast a total of eleven restaurants. Among them are renditions of well-known (and well-loved) spots such as Jax Fish House, Cuba Cuba Sandwicheria and Udi's Cafe.

We caught up with some of the folks behind these restaurants to talk about doing business in today's Glendale -- and about the city's plans to expand when and where diners can enjoy a cocktail or two.
