When David Lee's Chopsticks China Bistro, in Greenwood Village, wasseized by the state
at the end of last year for non-payment of taxes, it left a major void in Denver's culinary scene; Chopsticks was one of the few places that served authentic, homemade xiao long bao -- dumplings packed with pungent pork and juicy soup that are hawked by precious few places in Denver.
Thankfully, though, Lee's back: He and his wife, May Sung, just opened Tao Tao Noodle Bar in Aurora last week in the space whose last tenant was Pho on Havana, and before that, Chef's Noodle House.
And the new restaurant, he promises, is doling out the same food he once sold at Chopsticks -- the original Chopsticks, on West Mississippi Avenue and Federal Boulevard, that's now one of those Chinese scoop places. That original place offered a menu steeped in Chinese-American dishes, like lo mein and egg rolls, balanced by Chinese-Chinese specialties, including intestines, jellyfish and, of course, bao, Chinese buns stuffed with myriad fillings.
It's the bao offerings, along with the noodles, that Lee expanded at his new place.

"We're doing the same but more," says Lee. "We have breakfast now. And more noodles and more bao."
Beef noodle soup, Shanghai rice cakes and xiao long bao, translated as "juicy pork dumplings," are all on the menu, too.
