I have a simple rule when it comes to making macaroni and cheese: Somewhere, in the mix, there needs to be a processed cheese, a rule that makes a lot of chefs cringe in disgust. Whatever. It’s the white trash in me — and the fact that I like my macaroni and cheese melty. In any case, the mac and cheese in the above snap doesn’t use a processed cheese, but in keeping with my white trash tendencies, it does come festooned with Chex Mix.
