As far as I know, there’s only one Asian joint in Denver that serves guò qiáo mĭxiàn, a soup from the Yunnan province otherwise known as “across the bridge rice noodles,” the name of which was allegedly inspired by a dutiful woman who trotted the dish of steaming broth, to which she’d added meats and noodles, across a long foot bridge every day to feed her scholar husband, who had alienated himself on a desert island so he could study for his imperial exams.
