A small shopping center in the only corner of Cherry Hills Village that extends north of Hampden Avenue will soon become home to Cherry Hills Sushi Co. Husband-and-wife owners Bradford Kim and Olivia Maeng are aiming for a mid-January opening for their first restaurant.
Kim, who will be the executive chef, is a trained sushi chef who has recently worked on the financial side of restaurant groups SBE/Katsuya and Innovative Dining Group (which runs Sushi Roku and Katana locations in Los Angeles, Las Vegas and Chicago). The restaurant joins neighbors South Philly Cheesesteak Co. and Caribou Coffee and Pino’s Pizzeria and Wine Bar in The Shoppes at Cherry Hills.
