Its new Elevation series is a must-try, and it’s also opening a destination-worthy tasting room this summer.

The brewery, which specializes in the traditional pre-Columbian beverages chicha and pulque, hopes someone will step in to take over the space and buy the brewing equipment.

The brewery is run by Chris Belila, a former Fiction employee who has taken an interesting journey to get to this place.

“What we’re making here, and what’s being made at other cideries in the United States, are really the next wave of things.”
