Corey Baker has had a two-decade-long career in some of Denver's most renowned sushi spots: Sushi Den, Sushi Sasa, Sushi Hai and more. Now he's at the helm of Kumoya, which opened in October 2023 as part of Culinary Creative Group, which also owns eateries Tap & Burger, Bar Dough, Ay Papi and Forget Me Not, among other ventures. Not content to rely on standards like black cod and tempura, Baker's opening menu includes standouts like Nasu Misoyaki (miso eggplant that is broiled, creating a super-creamy texture that's contrasted by a sprinkling of bubu arare, crunchy pearls made from glutinous rice); a katsu sandwich made with Berkshire pork on housemade milk bread; rich, fatty tuna tartare; and Yakimeshi (fried rice with buttery crab).
