Number 85: Pupusas from Pupusas Sabor Hispano

There’s hardly anything on the planet that makes me happier than the banter and laughing that comes from the infectiously riotous kitchen at Pupusas Sabor Hispano, a roadside shack in Boulder that turns out the most fantastic pupusas. The made-to-order griddled spheres of masa, enveloping beans, molten white cheese, chicharron and loroco, a Salvadoran spice, are the culinary gods’ gift to Boulderites — and to crashers like me that park myself in a booth and refuse to leave until the crane squad comes to lift me up and away. I love all the pupusas here — the one swelled with zucchini, the disc stuffed with roasted Anaheim peppers and the orb that’s plumped up with fiddle head ferns — and I’m addicted to the acidic fiery slaw that’s the pupusa’s proverbial sidekick. After an afternoon here stuffing myself with pupusas, I almost want to move to Boulder. Almost.
