Auguste Escoffier woud be honored by the celebration in his honor.
For all you hardcore food nerds, there’s an event coming up where you can seriously get your geek on. On November 9, the Colorado chapter of the American Institute of Wine and Food will celebrate the life and cooking of Auguste Escoffier with an eight-course blow-out, “August in November: A Grand Escoffier Soiree,” based on the master’s recipes and hosted by Escoffier’s great-grandson, Michel.
Want a taste? How ‘bout torchon of duck foie gras with Gewürztraminer aspic? Sole paupiette with scallop mousse and lobster? Tenderloin Bordelaise with pommes chateaux? Yes, this is the heavyweight classic stuff, prepped by a handful of Colorado chefs — including Jason DeBacker and Bertrand Gesbert of Le Central, and William Wahl of Indulge — under the watchful eye of Michel Escoffier and then served in the Tuscan Ballroom at the University of Denver Hotel School, 2044 East Evans Avenue.
Tickets for the grand event are $150 a pop (not bad for the amount of food being laid on, and the wine paired with each course) and can be purchased through the AIWF website . — Jason Sheehan
