While I won’t be in a hurry to walk down Pearl Street for another meal at Salt the Bistro, which I review this week, I definitely found Bradford Heap’s Colterra worth the twenty-minute drive to Niwot.
And this month, Colterra is giving diners even more reason to make the trip: It’s celebrating its fourth anniversary with a $44 fixed-price menu.
The three-course menu includes an appetizer, entree and dessert. Among the options are an impressive sweet corn chowder, thick and creamy and garnished with thick bacon lardons, and a crispy-skin duck breast plated with creamy polenta and a dried-cherry gastrique.
