Diebolt Brewing in the Sunnyside neighborhood opened quietly this past weekend with limited hours and just two beers on tap. But owner Jack Diebolt and his parents, who moved to Denver to help, plan to ramp things up significantly over the next couple of weeks.
Located on residential Mariposa Street just north of 38th Avenue, the brewery features a good-sized taproom and a fifteen-barrel brewing system.

Diebolt currently has a porter and a pale ale on tap, but plans to add a wheat beer this weekend and an IPA and a saison the week after that. And he’d like to hold a grand opening party during the week that the Great American Beer Festival is in town.

Eventually, his focus will be on saisons, which is one of Diebolt’s favorite styles, and he is working on several pilot batches, including a biere de garde.
Diebolt and his father, Dan, did most of the demolition and construction inside the brewery. A permanent sign will be placed outside this weekend.
Diebolt is open on Thursday and Friday, from 4 to 8 p.m.; Saturday, from 2 to 8 p.m.; and Sunday, from 2 to 6 p.m. Those hours are subject to change each weekend.
